Serving: Try it always in low temperature to keep its properties. Better for cold use as it’s a variety quite soft and fruity, and it doesn’t resist the high temperatures as well as other types. Perfect for dressing salads, goat cheese, pasta, marinades, cold soups like Spanish gazpacho and maybe just to use it raw on toasted bread.
Good to know: Dark green colour limpid, typical from the fresh harvested olive oils. Its Aroma is exceptionally intense, fresh notes of green grass, tomato, apple and almonds. Astringent flavor with bitter and spicy touches which will be less intense as the oil change and decants during the first weeks. Good balance between aroma and flavor, the 2 varieties combined for this blend master piece
This is without any doubt an extraordinary olive oil, obtained in the first days of harvest. In fact, this project conceptualizes two premises absolutely necessary in order to obtain an early harvest premium olive oil:
a) it must be obtained at the beginning of October when the olives are still quite green
b) approximately 10 kg of fresh harvested olives are necessary to obtain just 1 Litre of this premium quality... amazing!
