Good to Know: The youthful vigour of Gevrey wines paints a vivacious ruby tint that transitions into a darker carmine shade as it ages. The fresh fragrances distinct to young Gevrey wines encompass strawberry, blackberry, violet, mignonette, and rose, while their maturation introduces a liqueur-like aroma interspersed with notes of wild game and undergrowth. The Gevrey-Chambertin appellation emerges with an assertive profile, backed by a strong structure and tannins that form a velvet-like texture. Their expression on a finely granulated level bears no harshness. These wines are enjoyable when young and fruit-flavored, but their true character shines as a treasured wine with potential for long duration. This quality makes them perfect candidates for exploring various vintages.
Gevrey-Chambertin wines are a fitting pairing for meat-based sauces. However, culinary enthusiasts will also appreciate it with a filet of pike perch or tuna prepared in a red wine sauce.
Tracing its origins, 'Gevrey' is derived from the term 'goatherds', indicating an early preference by the Gauls for rearing goats on these slopes. Today, that preference has shifted in favor of nurturing vines on these same hillsides.
