Good to know: Domaine Jean-Philippe Janoueix makes sure that the 20 Mille wine is produced with great control. Vinification is done in an open wood vat of 60hl. Caps are punched three times every day until 1/3 fermentation. Twice a day until mid-fermentation and goes down to once a day. During this time, alcoholic fermentation is done in 26/27 °C temperature for 28 days. Each barrel is yielding the same temperature when filled so Malolactic fermentation takes place.
This wine is best paired with classic meat dishes, roasted, braised and grilled dishes such as chicken, pork, veal, beef, lamb, duck and game. Hearty courses such as tuna, mushroom, pasta and Asian dishes also pair well with this wine.
