Good to Know: The Remirez de Ganuza Blanco Reserva 2021 wine is produced using grapes sourced from vineyards with an average age of 60 years and low yields. The grapes are carefully handpicked and transported in 12kg boxes to temperature-controlled cooling chambers where they are stored for 24 hours before being fermented at 4 - 6Cº. Following fermentation, the grapes undergo manual selection on a sorting table to ensure only the best quality fruit is used.
This wine is crafted from the flower must, extracted using a rotor deposit method that avoids crushing the grapes. It then undergoes a 6-month fermentation and aging process with its lees in French oak barrels. The remaining maturation process occurs in the bottle. The lees are stirred by manually turning the barrels, a unique system employed by the winery in place of traditional bâtonnage techniques.
