Decanting Time: decant for one to one and
half hours and serve at 18°C. This wine will still show structure and power but
at the same time elegance and finesse.
Our
suggestion for decanting time is based on bottles we tried at Txanton over. We guarantee Txanton stocks are imported and maintained on a proper
storage with right temperature and humidity.
Good to
know: Since 1986, the planting of young vines has meant that Domaine
de Chevalier had to craft a second wine, in both white and red. This blend of
cabernet sauvignon and merlot is known as L'Espirit de Chevalier. The Esprit is
also a way of making a wine and the Bernard family (owners since 1983) called
it like that because they wanted it to carry the hallmark of Chevalier and to
reflect the "Spirit" of the estate, combining powerfulness and
complexity but also finesse and elegance in total respect of the “terroir”.
It is
aged for 14 months in oak barrels, one third of which are renewed each year. It
is an appealing wine, ready to be appreciated between 3 and 5 years earlier
than the main wines in that appellation. One of things that makes Chevalier
unique is how it achieved fame in a relatively short time compared to the
majority of Bordeaux great growths, which took several centuries to acquire a
similar status… Of course, this is due to the terroir, but I would add that
Domaine de Chevalier’s great chance was to have been managed by a limited
number of owners, who all considered it essential to perpetuate a tradition of
quality. The previous owners can be thanked for Chevalier’s present image of a
famous wine at the top of its classification”.
