Decanting Time: It is not necessary to decant however we recommend to pour into the glass and leave for few minutes before drinking so the wine can breath and show its potential in aromas and taste. Once the bottle is opened, the wine will last in perfect condition for several weeks as long as it gets properly stored. Preferably to keep the wine in a dry cool place and with the bottle still standing up. That's why all Tradition wines come with a t-stopper.
Good to know: aside from the very old sherries, Tradicion also bottle this very old Fino which is "aged certified" due to the life cycle of yeast (“flor”, a layer of microorganisms living inside the barrels which protect the future wine from oxidization). Tradicion Fino is bottled “en rama” (like all Tradicion wines and brandy) which means that the wine is not manipulated or treated before bottling and can age easily 5 years easily... very few finos in the market are able to do that. Tradicion Fino is produced twice a year, one for the spring and the other for autumn so you can appreciate the different nuances of the yeast behavior during depending of the seasons.
This is not just a wine for aperitif. Pour it in a wine glass at the right temperature 8-10°and enjoy paring with roasted nuts or olives, iberico products like ham, fish, seafood, poultry or salads.
The original company was founded in 1650, which hold the oldest of the sherry brands known to date. Tradicion is the newest wine project within the family after 11 generations. Focusing on very old sherry, not-chill filtered, not blended, not stabilized, not clarified, unsweetened, and with no addition of sulfates was a very unique and adventurous strategy indeed. Tradicion search for the purest style of classic sherry and aim to produce outstanding wines certified with more than thirty years of age or V.O.R.S. (Very Old Rare Sherry) or more than twenty years of age or V.O.S (Very Old Sherry).
