Good to know: Even thought it was 2003 when this winery joined as part of the Marqués de Vargas Family Vineyards & Cellars project, it has a longer history as a winery. Pazo de San Mauro was built in 1591!! and it is a historical estate in the Rias Baixas Denomination of Origin, a property that today is covering 20 hectares set on the right-hand bank of the Miño River and belonging to the select sub-region of Condado de Tea.
The estate owned vineyards are planted in south-facing terraces, forming a natural amphitheater, which slope down to reach the banks of the river Miño,
The winemaking process of this Albariño is quite unique, as it benefits from three types of vinification: maceration of 1/3 of the grapes at low temperature (11 ºC), whole bunch pressing of another 1/3 of the grapes and direct pressing for the third part of them. Alcoholic fermentation takes part in stainless steel vats during 10 to 15 days at controlled temperature looking for the terroir typicity and the varietal expression.
