The New Year Starters
Époisses 250g Approx.
A cow’s milk cheese infused with Marc de Bourgogne, a brandy made from skins, seeds and stems of grapes, which gives the cheese its strong aroma with an ivory-orange rind that has a soft, creamy core. A historical cheese in the 20th century, before being lost in World War II, but revived in 1956 in the Epoisses farm in Burgundy.
Mont d’Or Petit 400g
A cheese with a notable spruce band that gives it a pleasant aroma, and holds its shape. Initially, fought over by the Swiss and French for its origin, but now fully recognized as a French cheese. It has a moist, golden rind usually with imprints of cloth. With creamy pale yellow pate that is easily spreadable when served.
