Iberian simply sublime. Its stylized and fine shape, typical of pure Iberian breed specimens, are the elements that identify our star product at first sight. In addition to its size, smaller than those of crossed animals, and that narrower shape, its dark hoof is very significant. It is worn because the animal has grazed free in the pastures and has been able to enjoy two montaneras (acorn seasons). Inside, we discover a ham with an intense red color and a great marbling thanks to the acorn, as the 100% Iberian pig has up to 75% of its fat infiltrated in the muscle, giving it a shiny appearance thanks to the fat. The aroma is strong, intense and persistent, very characteristic, giving notes of nuts and grass. On the palate, it offers a juicy and unctuous texture that, thanks to the high presence of infiltrated fat, melts in the mouth. Its taste, extraordinarily complex, has the right degree of salinity. Finally, in a long-lasting aftertaste, new notes are perceived with the aromas of the pasture, which makes our 100% Iberian Hams a simply sublime gourmet product.
Castro y Gonzalez, more than three generation involved in producing one of the best jamones from Guijuelo. Every specimen enjoys 2 Montaneras, instead of just one, which is the common procedure. The Montanera is that time of the year where the swines enjoy eating around 8kg of acorn-nuts (bellota) in the freedom of the grazing lands.
