Junmai Daiginjo is a symbol of luxury, brought to life with stern regulations governing the selection of raw materials and brewing techniques. At our esteemed brewery, we use only 100% Miyamanishiki rice from Nagano Prefecture, painstakingly polishing the rice to a mere 49%, and allowing it to ferment slowly at a low temperature with the aid of the Kyokai No. 1801 yeast. The outcome? An exceptional ginjo fragrance that is irresistibly aromatic, culminating in a splendid finish that is best experienced chilled, in a wine glass.
