Good To Know: Dominio do Bibei is one of Galicia’s most acclaimed wineries, located in the rugged Ribeira Sacra region of north-west Spain. Founded in 2001, the estate tends steep, terraced vineyards planted mainly with indigenous varieties such as Mencía, Brancellao and Mouratón for reds, and Godello and Albariño for whites. Situated at elevations between 350 and 920 metres on schist, slate and granite soils, the vines are farmed by hand and the gravity-flow winery is built into the hillside to preserve the natural freshness and character of the grapes.
Their wines are admired for their purity, minerality and elegance, showcasing the distinctive terroir of Ribeira Sacra with vibrant red and dark berry fruit, floral and herbal notes, and a fresh, balanced palate. Dominio do Bibei Lalume 2022 is an elegant white wine from Galicia’s Ribeiro DO, crafted mainly from Treixadura with a touch of Albariño sourced from high-altitude vineyards planted on decomposed granite soils. Fermented parcel by parcel with indigenous yeasts and aged in a combination of French oak barrels, Austrian foudres, concrete eggs, and stainless steel tanks without malolactic fermentation, it retains vibrant freshness while gaining texture and depth. The result is a wine with aromas of white stone fruits, fresh flowers, and subtle mineral notes, offering a dense yet lively palate with a long, dry finish—an expressive, refined white perfect for seafood, grilled vegetables, or light poultry dishes.
