Good to know: As one of the leading biodynamic wine specialists in Burgundy, combined with the expertise of winemaker Eric Germain, Domaine Vincent Girardin makes use of indigenous yeast during the fermentation process of their wines. Winemaking additives were discontinued, as were herbicides and insecticides. They also harvest grapes earlier than intended in order to ensure balance and avoiding over ripening. The use of new oak has been strictly limited, focusing more on the length the wines are stored in the barrel. This allows the wines to develop a more delicate and subtle complexity and elegance.

Domaine Vincent Girardin Chassagne-Montrachet "Vieilles Vignes" comes from 65 year old vines. "Vielles Vignes" or old vines particularly those found in Burgundy are highly regarded throughout the wine world. This exquisite wine more than earns its right to be labeled as a powerful and structured white. Full bodied, with notes of citrus, acacia and honeysuckle on the bouquet. The palate confirms the nose with the addition of marzipan, hazelnut and cooked apple. A truly exuberant Chassange-Montrachet that is more than able to benefit from slightly further aging and acquire more complexity over time.

A prestigious domaine based in Mersault, Domaine Vincent Girardin is highly regarded for the creation of some of the best biodynamic wines in Burgundy today. Having inherited five acres of vines from his parents, whose family goes back to the 17th Century in Burgundy, 19-year-old Vincent Girardin, went out on his own in 1980 to produce the best grapes he could find in Côte de Beaune. In 2001, he shifted his focus on the purity and elegance of his wines rather than the concentrated and heavily extracted styles in the 90's. This eventually led to the revolution on the style of wines being produced in the region.

Domaine Vincent Girardin’s Chassagne-Montrachet “Vieilles Vignes” 2022 is a beautifully composed Chardonnay made from 50- to 55-year-old vines rooted in the clay-limestone soils surrounding the village. After hand-harvesting and gentle pressing, the wine undergoes fermentation with native yeasts and is aged for 14 to 15 months in 500-liter French oak barrels, with only 10–15% new oak, and no bâtonnage. It opens with layered aromas of toasted almond, ripe apple, white flowers, and subtle hints of honey and beeswax, all supported by a precise saline minerality. On the palate, the wine is full-bodied and textured yet balanced by bright acidity, delivering a persistent, elegant finish. This cuvée marries richness and finesse, making it an ideal partner for lobster, shellfish, rich fish dishes, poultry, or creamy cheeses, and it has the structure to develop gracefully over time.
