His expansion of his family's domaine now include exceptional plots in both Gevrey Chambertin and Morey Saint Denis. Also, in 2006, David Duband opted to convert his his domaine into 100% organic farming, primarily for his respect and care for the environment as well as to create intrinsic quality wines.
Domaine David Duband places a strong emphasis in both harvesting and winemaking using traditional Burgundian methods. Harvest is done entirely by hand and crushing done by foot press. Beginning 2008, David Duband also places an emphasis in whole cluster fermentation which gives his wines more structure and finesse.
The Domaine David Duband Aux Thorey has aruby red color. This wine is clear and brilliant. The aroma is a combination of red and black berries, with strawberries and raspberries taking the lead. Notes of iris add depth to the fruit-filled nose. The finish is satisfyingly elegant and indulgent. Pair with roasted Bresse chicken for a delightful culinary experience.
