Good to Know: Domaine Alice et Olivier De Moor is a highly regarded organic wine producer located in the village of Courgis, just southwest of Chablis. Founded in the 1990s, the domaine is known for its minimal-intervention approach and produces wines from estate vineyards in Chablis, the broader Auxerrois region, and other parts of France. The De Moors planted most of their own vines, which now span around six hectares in Chablis—including Premier Cru sites like Vau de Vey and Mont de Milieu—and an additional four hectares in Auxerrois, where they grow varieties such as Aligoté and Saint-Bris. After severe frost and hail damaged their harvests in consecutive years, they launched a side project, Le Vendangeur Masqué, sourcing fruit from across France to craft expressive, pan-regional blends. Their commitment to terroir is evident in their use of lieu-dit labeling, as seen in the Coteau de Rosette cuvée. The estate has been organically farmed since 2005 and certified since 2008, with all wines made using native yeasts, minimal sulfur, and aging in neutral oak or stainless steel to preserve purity and character.
