They took over the historic Tenuta San Giorgio estate, which spans about 22 hectares of organically farmed vineyards averaging 40 years old. The winery focuses on native and international varieties like Pinot Nero, Pinot Grigio, Chardonnay, Croatina, and Barbera, crafting wines with minimal intervention to highlight terroir. Cordero San Giorgio’s Tiamat Pinot Nero dell’Oltrepò Pavese DOC 2023 is a bright and elegant expression of Lombardy Pinot Noir, showing transparency and finesse. It reveals vivid aromas of cherries and raspberries alongside subtle hints of spice and forest floor. On the palate, it is fresh and supple with a gentle structure, light sapidity, and soft tannins, finishing with a delicate mineral touch. The wine is crafted parcel by parcel, with a small portion undergoing whole-cluster fermentation, then aged mainly in stainless steel with a brief influence of oak. This results in a vibrant and approachable wine that pairs beautifully with grilled meats, hearty pastas, or can simply be enjoyed on its own.
