Our suggestion for decanting time is based on bottles we tried at Txanton in 2020. We guarantee that Txanton stocks are imported and maintained in proper storage within the correct temperature and humidity suitable for wine.
Good to know: Cims de Porrera was originally founded due to the concern for the abandoned centenarian and native vines in Porrera (grape varietals of mostly Carinena and Grenache), which were grown in slate soils at an altitude between 350 and 600 meters above sea level with incredibly steep descents of 40% to 50%. The tough working conditions, together with the miniscule returns for both winegrowers and vineyard workers, eventually forced landowners to abandon these difficult but amazing vineyards.
The initiative of resurrecting these vineyards with the goal of producing high quality wines was put into motion by members of the local cooperative, who Cims de Porrera purchases their grapes from. With deep and detailed knowledge of both terrain and terroir, their supervision and care have led to great results with wines of exquisite quality and aging potential.
The Les Cousins "Donzell" 2018 by Cims de Porrera is styled similar to a vermouth but different in several ways. It is described by the team as more like an "aromatized wine" rather than a vermouth or liqueur. Several herbs used into the mix also give it a distinct character which truly differentiates it from other liqueurs. The use of cardamom, almonds, lavender and citrus zest are just some of the ways this "aromatized wine" is truly unique. Though you can definitely experiment with different mixes and cocktails, Donzell is best drank neat with ice and a slice of orange on hot summer day.
Cims de Porrera was founded in 1996 by Lluis Llach and the Perez Ovejero family. A few years thereafter, Lluís Llach left the company to dedicate himself fully to his own personal project at Vall Llach. The Perez family eventually partnered up with the Perelada Group for a few years and dedicated their combined knowledge and experience into the evolution and innovation of Cims de Porrera. Today, Cims de Porrera is solely owned by the Pérez family, who, in their own right have risen into Priorat aristocracy when it comes to winemaking and innovation. Their members include the patriarch José Luis Pérez, founder of Mas Martinet, his daughter Sara Pérez, co-owner of Venus La Universal alongside Rene Barbier, and, finally, Marc & Adrià Pérez cousins and winemakers of Cims de Porrera.
