Decanting Time: decant for two hours and serve at 18°C. This is wine with a great window time very enjoyable already after 5 to 6 years but definitely needs aeration.
Our suggestion for decanting time is based on bottles we tried at Txanton over 2020. We guarantee Txanton stocks are imported and maintained on a proper storage with right temperature and humidity.
Good to know: Cims de Porrera was born in 1996 out of the concern for the abandonment of the centenarian and native vines in Porrera (Carinena and Grenache), which grow in soils of slate at an altitude between 350 and 600 meters in steep descents of 40% to 50%. The tough work conditions, combined with the low rate of return for winegrowers, forced landowners to abandon their vineyards. The initiative of recuperating these vines and making high quality wines was undertaken together with the members of the local cooperative, who Cims de Porrera buys the grapes from. They know every vineyard detail by detail and supervise the care of each one of them in order to have such a great result.
Cims de Porrera was founded by Lluis Llach and the Perez Ovejero family. Later on, Lluís Llach left the company to dedicate himself fully to his own personal project at Vall Llach, and for some years the Perelada Group worked in partnership with the Pérez family. Nowadays, Cims de Porrera is solely owned by the Pérez family, a sort of Priorat aristocracy. Among their members are included the patriarch José Luis Pérez, founder of Mas Martinet, his daughter Sara Pérez, co-owner of Venus La Universal along with Rene Barbier, and, finally, Marc & Adrià Pérez cousins and makers of this wine (Cims de Porrera) which some years ago substituted the legendary Solanes.
