Decanting Time: It is not necessary to decant however we recommend to pour into the glass and leave for few minutes before drinking so the wine can breath and show its potential in aromas and taste. Once the bottle is opened, the wine will last in perfect condition for several weeks as long as it gets properly stored. Preferably to keep the wine in a dry cool place and with the bottle still standing up. That's why all Tradition wines come with a t-stopper.
Good to know: Amontillado Tradicion VORS has an average age of 43 years! Through the very traditional and exclusive method from Jerez wines “Solera System”, the different vintages are blended into a single one then bottled.
This is not just a wine for aperitif. Pour it in a wine glass at the right temperature 12-14° and enjoy paring with spicy foods, raw fish like sushi or sashimi, smoked fish, caviar, artichokes, asparagus and vinegar based dishes (escabeche, pickled veggies). It also works pretty well with smoked and tasty meats such as iberico pork pluma, presa or secreto.
The original company was founded in 1650, which hold the oldest of the sherry brands known to date. Tradicion is the newest wine project within the family after 11 generations. Focusing on very old sherry, not-chill filtered, not blended, not stabilized, not clarified, unsweetened, and with no addition of sulfates was a very unique and adventurous strategy indeed. Tradicion search for the purest style of classic sherry and aim to produce outstanding wines certified with more than thirty years of age or V.O.R.S. (Very Old Rare Sherry) or more than twenty years of age or V.O.S (Very Old Sherry).
