A hard cheese with a grainy texture with a pale yellow color depending on the length of ripening. Dry and intense with notes of herbs when cows that milk were extracted from fed on the pastures.

Luigi Guffanti Fontina DOP d'Alpeggio Wedge 130-150g approx.

The rind is compact and slim with a light brown to dark color. The rind is not edible. The flavour of mountain-aged cheese in its early months.
